Ellie goes to a different school, and she already has an asshole. cheating, egocentric boyfriend - so why add in a few more?
If you mentioned the idea of Ellie and Jennifer having a lesbian encounter - that is closer to her story path/choices.
Sophia has the option to 'save' Jennifer from Aiden and Andre (asking the Don to help both Sophia and Jennifer when she stops the Aiden blackmail at task 4).
Could this lead to Jennifer making the effort to thank Sophia and stopping by her house to do so? I believe it could.
If Sophia was not there but Ellie answered the door, Jennifer could reveal that Sophia saved her from a bad blackmail situation opening the door to building a friendship.
This friendship could lead to some lesbian experimentation at a party where it is just girls - spin the bottle, truth or dare - basic porn tropes to move the encounter into lesbian territory.
I don't recall seeing any hints that Jennifer is bi so again - this is only a potential encounter that would stay true to Ellie's choices (and Sophia's who is Absolutely Not going to reveal to anyone in her family that she is being blackmailed and the price of completing the blackmail is selling out her only daughter to Aiden and Andre to be used like a whore).
Sophia is a Wife and Mother - but she'd let Andre and Aiden pull a train on her before sacrificing Ellie to them. Always good to remember why she accepts Any blackmail at all - she is enduring this blackmail to protect Dylan from physical abuse far less severe than what you are proposing for Ellie.
