Actually, your timing is a little incorrect. The Maya or Josy ILY scene occurs before Zoey says it to MC (assuming you meet the conditions for it). And if you say ILY to Maya or Josy, you cannot Return to Zoey when she professes her love no matter how many of Zoey points you have; you automatically Reject her.
And yes, you can currently only say it to one of Maya or Josy. I go into the details about how which of them is picked in an earlier post I made here.

If you do another full run and don't fuck with Jade at all, make a new save at start of EP.9 because chosing one too many "cheater" options locks you out as well. Good luck and keep that Ctrl key pressed.

Still doesn't tell me if I can get both her sex scenes on a single run, or if I have to start 2 new Sage playthroughs.
If it's just a choice I can make to unlock the scene, or if it has an entirely different set of variables to unlock it as seems to be the trend lately.

Basically, it's skill issue.
It's a bit more nuanced -- each decision damages the relationship by certain number of points. Being mad and greenlighting Jacob are both worth the most, 3 points each. Picking one of those isn't the end of the world, but choosing both guarantees the relationship tanks to the point of auto-rejection.
There were animations? Since when? What the fuck? Are we talking about the regular sex scenes?

The only way to not auto reject her if you tell her youre mad is to tell derek hes not a better friend than her
