Not well, since we know of her hatred/dislike of strippers. Maybe she already knows in her subconsious Madame is her mother, considering she can't remember much and has said she has some sort of mental block when it comes to looking up more information about her mother. The same kind of mental block could've made her forget that her mother is/was a stripper.
She also remembers certain smells like burnt wood and pinecodes. She thinks it's because they were outdoors much, but it's just as likely that her mother used a lot of incense sticks, which is (according to movies I've seen) pretty common in bordellos and vip areas of stip clubs.

On Sage route you will always see her, just not always recognize her (as the player).

I also think it's unlikely that she is indeed her mother, I'm just mentioning some things that hint at her being so.

Ep 10 at the dinner with Sage. Madame is walking in the background. If you accepted the VIP card, she will look at MC and hide her face because she recognizes him. If you didn't accept the VIP card she will just walk straight ahead.
