Jaime is one of the most popular characters. The incest pretty much started the whole story. Ned would not have had issue with Joffrey as king and would not have been beheaded, etc. But that's not really my point.
For the first book/season, it's the catalyst of events yes, but it is not the focus of the story being told.
The audience does not control what happens. But they control if they want to watch the show. My ex did not because of the incest and rape. I, on the other hand, thought the story and characters were reason enough to keep watching.

To further add to what I said, it's "hypothetically" Paypal that's responsible. The massive slew of incest themed porn content that was being openly made through Patreon offended their conservative sensibilities, and the threat of the money backer pulling its financial support scared Paypal into action.
When it comes to social taboos, incest is arguably the most taboo, and it is very understandable to see why.
Ranging from inbreeding to familial paedophilia, it's unlikely that it could every attain any degree of societal acceptance. Especially in this age of knee-jerk reactionary "I'm offended by everything", spineless, weak, spoiled, venomous, spite filled socially degenerated social media addicts.

Get the double-dose of censorship happy Tory governments, and socially inept ideologues in positions of power (look up Count Dankula's court case, and the Judge's comments of "Context doesn't matter").
On a side note, I was pleasantly surprised when Valve showed some sound common sense, and went in favour of customer choice over censorship.
*Side Note: The age stuff does bother me. I know they say 18. And in this story it seems weird that Max would have to worry about being sent to military school against his will if he is over 18. I can assume Lisa is 18 in HS though...
