Hey actual meaningful fishing mechanic discussion, nice. They do mention directly in that devlog that the fish will be sellable as well as used in cooking whenever that drops, which will give you "various gameplay benefits." I'm just spewing ideas but I could see it as a means for unlocking specific aquatic body morph parts maybe, and potentially fishing up treasure from a fishing loot table. Will it actually go that far? Probably not, but I wouldn't mind if it did. At the very least I can see some quests centered around it.
I'm a guy with near 200 hours in a fishing game on steam and I like to fish IRL, so I think it's safe to say I actually can enjoy it when it's done right. And even when it's not I think harmless fun is a good way to describe it. I would honestly be incredibly surprised if the fishing had any actual complexity to it, but even if it was something like Stardew I'd be alright with it. Although I think it would be really funny if the fishing stuff does end up being super in-depth.
