AVNs are good at showing stuff. Through visuals. What they cannot convey through visuals is how it feels. The sense of touch. So good writing in a sex scene of an AVN is for me writing that makes the experience more complete, by using words to let me know what the MC is currently feeling while sleeping with that cute girl. If the writing is used to describe what the MC feels, smells, tastes, hears, thinks, the experience is closer to real sex than if nothing is conveyed but what the MC sees - the visuals.
I can see that her tits look awesome, the text doesn't need to tell me that. But how does her hair smell as he kisses her neck? Does it still smell like spring blossoms from the shampoo she used in the shower before sleeping with him? Is her breathing already shallow and fast from the action? Is she contracting as she climaxes? Is her pussy so tight that its threatening him to cum outright? Compared to the milf where he felt gently pleasured and comforted by being inside her?
Stuff like that.
In many games the writing during the H-scene consists of the MC and the girl still talking with each other as they have sex. But sex is mostly about experiencing, not talking. That's where the writing can make a big difference.
Its preference, yes, just like a car that doesn't break down is preference. Most would call that a good car, though, and similarly I think most would call short, non-descript sex scenes, that end after 5 lines of always same-ish dialog, bad sex scene writing. The sex scene is the reward in an AVN after all. I want it to be treated like that by the creator.
What the creator focuses on while using words as a substitute for touch, smell, taste, hearing, is then what I see as preference.
