As Cat is a first cousin, so is her child, but that's where "once removed" comes in. It denotes a difference of one generation, up or down.
So your first cousin's child is your first cousin once removed. As is your parent's first cousin.

They will also be first cousins (through Amy) to MC, as well as his children.
Second cousins is the relationship between the children of first cousins.
So when Cat has kids with MC, they will be second cousins to MC's children with someone else.
Meaning Liz's kids with MC will be second cousins + Aunt\Uncle to Cat's kids, as well as half-sibling to Cat.
