I don't suppose you bothered to take the time to check out the Changelog in the OP first, did you? First of all, v0.10 is only in the Beta phase of development so not everything planned has been added yet. Still, there seems to be quite a few things listed already, and that's just up to the leaked second Beta build.

Ellen was a teen when she went to work for MC's grandfather. and i thought that that was 14 years ago... meaning she is early 30's at most. [or at least that was my interpretation]
also, Maria graduated last year, and her [ex]boyfriend refers MC as 'old' which he wouldn't likely do to someone in their early 20's [i was thinking late 20's?] but Runey leaves MC out of camera as much as feasible to let the player decide that for themselves since you[we] are immersing ourselves into the game as the MC

Yeah, it is best not to focus on one girl at a time, when this happens, go talk to another girl for a while. Spread the love around.
In most cases, when there's a message talking about another girl's friendship level, that's usually referring to the big number at the top left of their page and not their "Affection" (or "Obedience" in Lin's and Android's case). To paraphrase what TheDevian said, "Make sure to spread the love around."

It does seem to be beneficial to advance the stories of all girls, even if you're not at all into one or more of them, as some of their stories are tied together at some point, and by skipping one girl, one could unknowingly be skipping out on content and/or just interesting knowledge of the other(s).

It's been a minute, and I admit I never really tried to purposely leave any particular girl out of a playthrough to test whether or not the stories of all the others would still advance as intended, so I could very well be talking out of my ass (obligatory fart noise).

There are a few things that are tied together, but some of the story kind of assumes that you are playing each story as they come out, so when you play from the beginning you can get things in a different order and occasionally that can cause issues, either events not triggering or just some story events that might make less sense.
The best way to do it, is to rotate between them, and do some non story events between each cycle.
