Try getting all 3 of the Mercedes pool Scenes and then maybe the gym events will open up

ROFL. I have ALWAYS looked at the Reqs long before attempting said event/scene/appointment just to make sure I am not going to miss something. Not to mention with helping this game I am well aware of what is needed to be done when trying to get an achievement.

What time are you seeing if she is in the Gym?

You should see Mercedes in the gym at 2:30 am, 30 minutes after the bar closes. Track her location via the smart watch, and it should be on 'workout' when she's at the gym after the night bar closes.

I like the game, and girls are smoking hot..only thing that bugs me is MC dialogue/monologue. Half of his lines are "OMG look at those boobs!", sounding more like inexperienced twelve year old.

I'm pretty sure, it's not even close to the 1% range
And he likes boobs. Can you really blame him?

the girls getting angry if you miss their appointment is pretty buggy, they get angry for you missing events that have not happened yet, it looks like the trigger for getting mad happens whenever there is a day change, instead of the time being after the actual appointment and checking if you went or not, idk, but i do get a lot of random "you didnt show up" when the events didnt even happen.
