Used to love this game, but it is tough to play the last couple of updates due to the issue opening the game.

Uh, what issue? Instructions seem pretty straightforward and simple.
1- Extract to desired location (Not in the same folder of the older version).
2 - If using the Companion Mod, reinstall that Mod per its instructions
3- Click on "HolidayIsland.exe" to start playing.
Just look for Yvette!

7 years ago this game had one of the best qualities of image of all of these games. Now it is kinda below average. And yet it is still going with no signs of finishing anytime soon.

Disagree. Darkhound's skills (and technical abilities) improved very much in this 7 years and also the game images improved very much from the beginning.
Some newer games are full of AI generated images, I dont like that too much.

Did it really improve? I was saying based on the preview images and from what I remember. Last time I played it was in 2022, so I guess I'll play it again in the next update.

The majority of the older pictures have been converted to a Webp format. As there are somewhere in the neighborhood of 15,000 pics, you can imagine the effort required to accomplish that transformation. Some girls, like Ivy and Lacey, to name two have entirely new looks, figures, etc. Up to you of course, but I would definitely recommend giving it another try.
Despite maximum strength and pills, I can't push Mercedes into the pool. Is this a story thing?

Along the same lines, no matter how much you boost your strength with working out and pills and Companion Mod maximization, you can't pick up the huge dumbbells two-handed that Mercedes curls one-handed... also a story thing.
(Though personally, I think those dumbbells are somehow related to Mjölnir...
)
