For a demo of a game that's not even done yet, I would have expected this to be a 0.1 version or something. so why is it 1.0?

A versioning system only needs to be internally consistent and compatible with whichever version control system the developer decides to use... and, even then, they can give public releases completely different, entirely arbitrary designations if they feel like it. You'll probably want to stick to a more widely adopted guideline if you're developing open source software which someone else might use as a dependency, but it really doesn't matter if you're making a porn game.
