The "Poker-Event" which is actually Blackjack does not really matter at all. It is the choices afterwards (e.g. if you want to help with the dishes or if you want to relax on the couch)

I got stuck on this for a long time. You need to get the schedule and look up her daily routine and choose different options from previous ones. Same thing happened to me with Katherine because I couldn’t find her in one particular part of the morning and choose one other option to finally start intercourse with her.
Scopa doesn't really have an English name (although I have heard it called Sweeps) since it uses an Italian 40-card deck. Like, the only thing I'm being told is to ask her for a HJ and if she doesn't go for it then I should give her wine and visit her at night, which I have been. Then when I visit her at night she actually gives the HJ and then that's basically the end of that, I can spend the night or leave. Then the next day it's the same shit just rinse and repeat...? So what exactly are these "different options" I should be choosing?
By "different options" he means different times and events in the Schedule and not dialog options. The way this game works is that more dialog options and events are enabled when you complete other events with the same person or others. In the Schedule, if the time slot for a person at a location is Green, it means new events have been enabled for that person at that location and time. When there are events not yet enabled (Yellow in the Schedule), you must focus on other events for that person, for other people, fill more G.A.I.A. containers, or do other non-event tasks (like find the birth control pills, etc.) and then see what events in the Schedule have now turned Green so you can now do those enabled events. Note that a lot of events are enabled by multiple events/tasks and that there is no simple do-this-to-get-that map, so be patient and turn your attention to other events or tasks to see what eventually gets enabled.
