The NTR tag is only up there because a couple years ago a few very vocal, possibly mentally unstable individuals were losing their shit DEMANDING the tag be placed so that they could absolutely avoid ANY game that had ANY NTR content, regardless of how little there was or how avoidable. Their sensibilities were being trampled apparently. So the tag is up, and now you have the situation you face today.
Sounds like some fine upstanding citizens just trying to make sure the horrors of NTR content are avoided at all costs!

I followed it, then just kept choosing to wait through the days and sleeping at night. It took almost a week of skipping through days before her night event finally triggered for me. Almost like she had to think about our relationship for a while.

In that save you confessed to her already. That scene should only trigger when you confess too earlier. You need to unlock her dark secret and remove her inhibitions before confessing. Either load a save before confessing or start over.
And she won't. The dev said this countless times. You need to start over or load a save before you confessed to her. But for this update it is definitely worth starting over. (Says the guy who has done at least a dozen play throughs)
Yeah, unfortunately, you jumped the gun early. Forcing her to confront her feelings before she was ready, while gratifying in that moment, has consequences. She's not coming back. You'll have to return to a save point before that event if you want to see more from Evelyn's path.
