You can enable console commands by setting config.console = True in ...\renpy\common\00console.rpy in the games main folder. To access the console press shift+O, esc to exit it.

Using it while in the load/save menu can keep it from rolling the game back at certain times.

press shift + O or ctrl + O to open console if that does not work you have to go into Game -> Common and edit the 00console

find Config.console = False and change it to true!

Console Cheats:
Money - hero.money=xx
(These next 4 max at 10 and will still go down throughout the day)
Energy - hero.energy.score=xx
Hunger - hero.hunger.score=xx
Cleanliness - hero.grooming.score=xx
Fun - hero.fun.score=xx

Knowledge - hero.knowledge.score=xx
Strength - hero.fitness.score=xx
Charm - hero.charm.score=xx

For the girl's stats, swap out G for the girls name
G.desire.score=xx
G.relationship.score=xx
G.sub.score=xx

when do you get the option to tell samantha about "Ryan"? Im not getting that option

If you meet her somewhere (i remember it was the bakery and in another playthrough the park) there should be an option where you can tell her about Ryan. You get the option to really do it or say nothing.

I left Sam and Ryan together, if 2 people deserve each other it's those 2.

I don't have an inventory option anywhere, I found one by accident one time at the mall? But literally nowhere else, tried reinstalling/clean installs and nothing. Something I'm doing wrong?
