Ok. I didn't remember the dialogue that well I guess. So I assume that it's related to this old guy, and she didn't keep good memories of it (that could explain the sudden "transformation" but I'm not convinced). So, as many other things, we don't have the whole picture (yet?).

I think she refers to her old self. And although it could be read as a typcial phrase one also could detect therein a decisive, forced and odd distancing from her former self which I would be bothered by if I were Hutch.
You are right. It doesn't make her a whore in her younger days. Just a liberated woman. What she did in CH2. ...Well it has been discussed a lot and in my opinion she definitely is a whore. Chances are really high that it will get worse because it's a porn game after all. In the beginning that I played CH2 I was 100% positive that she was driven by lust. I believe in the end this is her warped act at punishing herself within the pleasure. Though the marriage is over there won't be a reconciliation. (came to this conclusion due to the DEV putting (NTR) at the end of the title not(NTS) or (NTI)) The question becomes how and what is going to happen as we get to that end.

seems like nothing new has been talked about for a while.... i'll post a theory about the possible purple dress event.
what if the client that vivian is entertaining in the purple dress is someone connected to the cigarette man or it might just be him. which would connect how christian picked that wine since he liked it and now he might connect the dots and send vivian to that client and see what happens. the same way vivian proposed the whoring the employee's wife to gain contracts idea to christian.
ps: we don't know for sure if christian didn't do this before from what info we can extract from the story so far.

since SC Stories keeps giving hints about possible direction of the story in each chapter, the above theory doesn't seem so far fetched.

It is possible Hutch might have said something about it before the events of the story transpired. Christian told Vivian that he thought Hutch might have been lying about being married when Christian first met Vivian. The subject could have come up in office talk, and Christian remembered it. If somebody in the office said that they liked wine, and mentioned a particular brand, Hutch might have mentioned that his wife liked the specific wine referred to in the story. How Christian knew hasn't been disclosed in the story yet, and it might not ever be revealed, but I think there could be a number of reasons why, including things that predate the events of the KN. Just my guess.
About the the cigarette man possibly being the one Vivian is entertaining when she is wearing the purple dress.

It think the story is much more complex than that. I also think there have been good discussions of this game in the past. One problem with these forums is that they continue on even if a definitive answer is given and the definitive answer gets forgotten and current readers and writers, not having read or understood what came before return to rehashing old issues as if new. Nobody actually learns anything, but does not seem that is what we are here for.
