That content is pretty old, but I haven't changed anything there, let me check and I'll let you know if I find any problems.
I just downloaded the game a few days ago and I'm only on day 4. I was just checking the guide for some easy early stuff.

I don't find anything strange in this mechanism, it worked for me as it should.
You just need to have the knife in your inventory, stand in front of the vine, and press the event button, in my case it's the space bar.
