No...

No guide, game's linear and has an in-game guide/checklist of things to do to proceed the story.
Choices are basically to see/avoid Bad-Ends, which all take you back to the point of making the choice in the first place so you can make the other choice.

Yes you can turn it off, and at that point you won't have to worry about Bad Ends any more.
