Legacy option is an in-game quiz that, depending on how many questions you answered correctly, lets you pick some bonuses at the start. You can get most of those later in the game, except maybe the bonus vendor, though I'm not sure.
You can just try and guess the answers anyway.
You will miss about half the content in this game. As per the nature of having Male or Female protagonist, one can't see the scenes of the other. An obvious example, female character can get impregnated and have pregnant sex with various male and futanari NPCs, which is simply not an option for male character, because men can't get pregnant. And conversely, male character can impregnate and have pregnant sex with several female NPCs, which is not an option for female character.
And of course, almost each origin gets their own exclusive sex scenes, not available to any other origin.
You can change classes freely at any point, if you have unlocked them of course.
So you'll have to do at least two playthroughs, one for each gender, if you want to get as much content as possible.
