As always, work on the next update is quiet but steady. Still, Zargon's focus recently was a little more on the upcoming update of his other game, Young Again. Based on the current render count, we might be about a third to half through the next update, maybe, but it depends on where we finally decide to make the cut which we haven't done yet. Pretty surely a winter update once again, but I won't say anything more concrete until we really know more.
There are women-only lesbians and there are women who identify as lesbians because they strongly prefer women but will sometimes enjoy sex or even enter into a relationship with a cis-gender man based on an emotional connection. It's not clear to me

Maybe Katie is bisexual, with a general preference for women but sometimes having relationships with men as well. It's possible she is less promiscuous than Cat and wants a stronger emotional connection with a man than she needs with a woman. More than she has at this time for the MC. There is some level of emotional connection with both or you would not get the scene - I missed it the first time because I had too few points with Katie - but it may not be enough.
I would like to think that if she goes further with the MC in future it will be for the reasons you're proposing.
That doesn't change my decision. I'm not interested in pursuing someone who presents as not wanting it. If she wasn't interested because she needed a stronger connection, she could have said that. What was said is that she has no interest in men. This story requires making choices, and she's given me a reason not to choose her. I will pursue others instead. From now my focus will be Helen, Anne, and Rachel.

Reasons for all of the girls' behaviors will be uncovered as the story progresses. Most do run deeper than they might seem now.
That being said, it is a very valid choice not to pursue Katie as she clearly stated no interest in men now, so for you quorkboy , this might be the right choice. If you want to, replay the game at a later time with a different focus and see if that changes anything for you. The game is definitely meant to be replayable and go for different girls. It should be quite obvious by now that going for all of the girls at once can't work out anyway, since you can't be everywhere all at once and they are looking for different things (like the different traits).

Points to get with her: Talk to her at Stuart's party and compliment her, but don't further talk to Peter. Talk to her at the hike, then help Rachel. At the camp, help with the cooking and have spices packed from the minigame before the camp. Finally, make a funny quote about your night watch duty.
But maybe you're missing points with Peter instead? You can get some by talking to them at the party, talk to him further about politics, talk to him at the lake and about the game, talk to him at the hike and then do the wood chopping task at the camp.
Should be more than plenty, even without suitable traits, but if you need some more points with either, avoid being too athletic.

It is quite different though. Much more freedom to pursue girls that you want but it's also possible to see stuff you might not like.
But, somewhat like the scene in Young Again where you help the guy you bullied in the past to "reconnect" with his sister, you can often choose how it plays out.
