By that I mean, that I'd pretty much release a new executable, saves would be reset but instead of having the player go through the entire game again, they would be offered the ability to pick important choices from past chapters to build a strong base of variables for future chapter, or if they played the game before they could just replicate their choices to continue the story.

Why not just continue this project? A remaster already? after a v0.11, seriously I hate when devs do that instead of continuing a project until the finish line. It was 18 months between 0.10 and 0.11 and its been over 2 years since the last update. If you want my advice I would recommend putting out content regularly instead of remastering a game that has not had any updates for over 2 years.At this point I plan to both remaster the first chapter, but also incorporate the next updates in the form of a "new" game file.

Idk who started this silly idea of doing remasters instead of finishing a game but I have to hand it to him. Seriously do they even understand what a remaster or remake mean??? Big game development corpos are doing that for old games and well sold games not for a v0.11 of an unknow semi-abandoned Estory.It was 18 months between 0.10 and 0.11 and its been over 2 years since the last update. It would be different if the game was completed and you did a remaster but since it hasn't moved forward in years that remaster will not make a difference since the game still ends in the same spot with no future updates in sight.

Also, always build a chart from start to finish with big titles for your games, like this is the start, this what will happen, then he gain power and finally he beat the demon king.
Now as an advice, if you still want to do this game, take the assets again and start by making small chapters of the game. By releasing the game into different chapters, you will keep your code small and you will see clearly where you are at and where you go from there.
Do a remake if you want but don't do it as a summary just rework the existing assets into chapters and see if it works for you better this way.
Worth noting that reworks of games in development not only do happen, they're essentially baked into the current process despite attempts to do otherwise.
