It wouldn't bug me so much if it was at least internally consistent, but it's not. The basis of Sophie's relationship path is entirely built upon dosing her to be more comfortable around you. You can pursue a relationship with Penny, and then also dose her to either work her ass off after hours to make your life easier, or... work her ass off around the office. It's just weird that with Tasha the MC is suddenly like "Oh, that would be wrong, I like Tasha."

To be fair, it is pretty consistent.
It's another dosing path (of sorts) that's consistent with ways in which the MC's choices of which dose paths we take them down.
Although the issue itself is one that stems from her having originally being a normal woman, then made a transwoman during development, and only recently getting the possibility of having her be transformed into a completely biological woman (again) via magic - Saya visting her in her dreams too.
There honestly does need to be an alternative for her transformation other than magic. Something involving the extremely effective body altering, dna rewriting TFM-1 serum.
That's one of 3 paths with her.
MC can dose her to be more open and intimate - Romantic path
Be more sexually open and available and submissive to the MC - Slutty, which also leads into the third part where a MC with low dominance gets dominated by her.
Don't forget you can take it as far as having her be her own human test subject... That's a pretty fucked up thing for the MC to do, arguably more than dosing her to be our own whore to pimp out to faceless office workers.
Except that Penny doesn't have to be dosed at all (beyond plot-related CMD test), as you mentioned.
She's interested in the MC and can be a more "wholesome" love interest. As wholesome as can be at least within the setting.
Not dosing Tasha is another example of the "nicer" side of the MC, as much as more "positive" dosing of others leads to more pleasant outcomes, and is consistent with not dosing Penny.
In John's case, it's as much if not more so about survival within the company. He's a threat to the MC that can take over with most of the women, even Tasha.
We can be "nice" and just make him more pleasant to work with, even as far as a romantic/consensual interest. You're ignoring the key difference that with others you can make the choice not to dose them (e.g. Penny) or try and fail (Julia) but only with Tasha (if you fall into the trap of not dosing her for a fortnight) does the game lock you out from even trying, deciding for you that the MC does not want to do that.
Re-making the game with 2d/3d art is a great idea. It won't be limited by the existing amount of porn videos of the pornstars in it.
I'm not ignoring it.
I just put it down to what a lot of people seem to forget about - Saya. Saya is clearly some sort of supernatural entity with magical power.
