To be fair, we only see her body if we're on Medb's path. It's not entirely unreasonable to doubt her death when it's hearsay from a potentially unreliable narrator.There is no trump card, nor a backdoor.
She's death, we are at her funeral, her body is there, which we can clearly see and her remains get burned viking style.

The purpose of her death is quite clear, it's escalating the conflict with the templars.
That said, I very much doubt there's any sort of backdoor planned here. Revealing the whole thing was a big misunderstanding - or worse, undoing it with the atomic-powered can of worms that is time travel - would gut the emotional core of this chapter and call into question any future drama Ceolag might attempt. And, of course, we do see the body if we get the final scene of the chapter.
Seems pretty cut and dry that what happened happened. All we can do now is honor Finnabair's memory.
