Well, so far the MC isn't marrying anyone and who knows how many updates it will take...thought, at least it sounded like there will be only one queen.

There will only be one queen, but I think you can marry as many as you like.
I'd have to recheck, but I'm am pretty sure that you could get a girl's status from 'harem' to 'betrothed' with your choices and I think I have more than 1 currently listed as betrothed.
He had said that we’ll get to make the choice of Queen in this coming update, but that was many months and several thousand subplots and rewrites ago, so who the hell knows.

You can marry multiple people. Theoretically, it is possible to already be married to Kaylan and Lydia while being betrothed to all four of the princesses, including Estrid, as well as Dinah. There can only be one queen and have three living in the villa with you (eventually).
The Dev in his most recent update post essentially said that he predicts the size of next update is going to be roughly the same as of all of Vol 1, with the equivalent length of development time.
So, we’re still several months away.

Game has been in development for 5 years. First two years had 9 chapter updates. Next one took 2 years.
Months? Maybe in double digit amounts.

Just started this game, I don't know what to think yet but went back to close the youngest daughter's path, couldn't stand anything about that character. She's gotta be the most annoying LI ever, even rivals the stupidity of many sidekicks that you can't get rid of.

Yeah, she annoyed the shit out of me to, so I took her out of my harem. (I also think it's a bit funny, that I'm taking both her sisters, but not her, but maybe that's a little cruel).

It depends on whether you like Valentina or not. If you don't - I understand it'd be annoying.
Personally I kinda like her, so it's not a big deal for me, more like a part of her charm - being pushy.
Also I would argue about "most annoying LI ever"
