Grandma's family was from Northern Italy, so might have been a little different, but our way was to add the sugar when the tomatoes were store bought and not very sweet. If you grew them yourself (which we often did) or got them from a farmer directly (which we sometimes did), and they were actually picked when ripe, no need for it. The grocery store tomatoes tend to be picked way too early and artificially "ripened", and they don't develop the natural sugars, resulting in little to no flavor, so you need to add some.Testing out some food assets.
