i would go for steam version (s1 beta).
thats polished and improved version which should cover first 10 eposodes (or so)...this is also under active development atm.

I'm still planning on releasing the next demo at the end of the month. Initially, I had hoped for this demo to include the re-do of ALL of chapter 9 and 10 (which will be the final chapters in this re-do), but at the moment, I may not get ALL of chapter 10 in before the end of month, so I'll publish what's ready and then finish the rest in September.

I am confused. He wills top the redo wih Chaper 10? He included new stuff including the Sister angel which is more intimiate as exmple. How does this even work with the rest of the game ?

So they pushed steam release from 3rd quarter to 4th quarter but basically releasing all 10 chapters on patreon with the next month and a half. So no steam purchase for me.
Season 1 of the redo is Episodes 1 - 10 of the original game, plus new content, and it's specifically for Steam.
When Season 1 is released on Steam, the team will work full-time on Chapter 25 of the original game for Patreon, which, when released, will complete the original game.
Not many specifics after that, but it's logical to expect that there will be a redo (or partial redo) of episodes 11+ that will be released as Season 2 for Steam.

Best to read past post say about 1 year and follow the changes planed an why they were given and future plans for the game also discord has info but up to you to read it

Episodes 11-24 are done - they are NOT getting reworked (until after episode 25 is complete).

they arent reworked, true, yet most probably they will be reworked once ep25/game is complete.
