Pause menu in-game/main menu < settings < input. Setting for sandbox are I think, toward the bottom and you can remap whatever.

Hi, I'm new here, this is another game I'm following.

Is it possible to create your own animations?

yes the sandbox features an animation sequencer tool that allows you to keyframe anything.
each character canbeenabled to control every bone as well.
so you can basically animate anything you want however you want

It feels like the latest build is just a big empty world thats unfinished, at least in the Demo version of this game you could fuck the NPC's but in this "full version" you cant as far as ive seen.

these are development builds, nothing is finished
but no, you can load into the sandbox and drop in every single sex scene if you want. the Demo was a verticle slice, and was more so of them testing the capabilities and learning about what their limits and options were for development.
