Personality? She's obviously more mature and healthier than the other teachers, including Bella, by being on a dating site, and actively "breaking up" with the MC for professional reasons. (Compare: Cathy.)Not "we", you. This is your personal perception of her personality.
I'm not talking about her personality at all.
She may be an incredibly good person, as you describe, but it all makes no sense when she seems superfluous in this story where we already have several LIs teachers with their roles in the story. She has no role in the game's story. It's more of an appeal to fetishes - a very curvy blonde woman + pregnancy kink as suggested above.
One thing, I'll say about the date, I don't like the part with the card game, it feels like an interrogation. I prefer casual talk with people.
What is the game's "story", exactly? What makes no sense? It seems DPC just does random things every episode, including an Interlude. It's MC slice of life in a frat, with dangling threads that are (probably if not already) going to be forgotten. All the girls make no sense, including the MG's. Look at Maya: is her story done? Seems so; I have no idea. And Josy? Buh? Bella's just there to help out the MC. Sage is...graduating? Jill is going to help people with drug issues? How does this all connect?
And Zoey's -- the most superflous of all -- was already done. But now there's going to be more.
Nora is similar to Sage in:
-Sage: the MC teaches his hobbies (fighting & music.)
-Nora: the MC shares their workout routine (similar to Bella), and it appears Nora is teaching the MC's favorite subject at school (assuming he's going to study chem/science in the future. But this story is, to my understanding, only 1st year.)
Does Bella have a role in the game's "story"? Sure, she pops up here and there. But so? She's just the broken, brunette Nora. Insert fetish choice.
DPC said that people are free to choose whatever romance they like, and the story and MGs will keep on going. Maybe Nora's will go nowhere, as certainly will several Other's. But all the MGs have their own thing going, and the MC (and us) are along for that non-romance ride. So all romance choices are superfluous.
