MoMoney No, to active Special Events u need to go and search then interact with a especific item like for example; Halloween need to find a Pumpkin in a determinate time of day (afternoon) and play the event; If are u see all events scenes to return current normal game just go bed and sleep.
For others event like Christmas is similar so no, no actual real especific day like u say.

I know she's from RWBY haha but since I've never seen the series and the only reason I know some characters by their looks has been thanks to Rule 34, I didn't know her name xP

Nope, as Jegath has said , they don't need a date change or anything to be activated (unlike the easter egg in Arkham City). However, they have to be activated in a certain order.

Check this post and also the link to the guide in said post, that way you're not gonna get lost.
However, I'd recommend you to play it from the start and not use a savefile so you can experience the game and not miss stuff.
