It's a single scene, unless you see the breeding as NTR since one of the LIs is a breeder, much like yourself. If not then the NTR will dissapoint you.

Better NTR, which at least somehow makes the game more diverse and the plot sharper, than another predictable vyser that you can scroll through for the sake of scenes and delete it. I do not force anyone to anything, but I have the right to express my opinion, like any other person. And it's funny for me to watch how toxic harem lovers accuse me of loving NTR (which is not true) and say that I prevent them from enjoying a game that they do not enjoy, but are trying to change for themselves.
And you continue to miss the point. The developer said there would be no NTR if you choose this option. That is false advertisement. Going by your opinion, you would let companies falsely claim a product does something, fully knowing it doesn't. So, while your opinion can be taken into consideration, it doesn't change the fact that the developer lied about how his game works.

Is there something I'm missing in unlocking all of the interactive positions for sex with rika at night, can't seem to get them to unlock and be interactable
I played that part some time ago, but I think they should be all unlocked by the time you finish her arc (or at least, the part that is already in the game, I think there may be more to come)

If the alarmists push the idea that the developer is lying to them and there should not be "NTR", then part of the content will disappear from the game, Rika will not appear in the breeding pit, a female protagonist will be added and the game will be "Perform some useless nonsense to get one attraction point and watch the scene" and so on throughout the game. NTR is when a romance partner (romance in vague term, maybe affective partner is better, so even friends and family can count) is stolen from a third party, willingly or not, on a more or less constant basis. NTR implies a fair quantity of the "corruption theme". Here we got no corruption, no stealing, no constancy.

NTR, Cheating, Corruption, Slutification, Sharing and some more are all different genre.

NTR on this site is a broad term. The meaning of the term is different for each User and Developer. Just check the tag and see all the games under it. They all won't fit your term. Best term to use would be cheating but most people just assume NTR would fit.
