In terms of adult games, it's usually because it's Japanese law and they are very reluctant to change that, hence mosaics. if you mean in a wider context it's because it infantalizes and removes people's free will under the guise of protection, i.e. I don't like X so I will prevent others from also having to endure X as well, it never occurs to such people that their tastes are different and divergent, no indeed all must be protected from the results of their free choices by never having the free choice itself, which goes back to my earlier point of infantalisation of people, who better to decide what you wish to consume or do? Yes, in terms of wolves (which IIRC wasn't 100% accurate research at the time and the general understanding of it is "bro-science" now?) the beta is actually part of the pack, while Omega is the lowest.
However, in CFB's case I think it can be forgiven because the game is very comedic in tone at times. It being set hundreds of years into it's own future could also mean that the Alpha-Beta terminology has been forgotten/mutated over time.
"Censored for Omegas" doesn't have the same ring to it. But, had Pallas's named the MC Simon, "Simon's Censorship" wouldn't be a bad alternative title I'd say.
