The list isn't "What will be included in the game" the list was "What I will / wont draw" as in, what you're allowed to commission from the artist.
They could also just... not want to draw men. A lot of people don't want to draw anthros even if they've done so (well) in the past, and even if they like the fandom.

I mean, I like drawing women more than men, maybe they just don't feel like adding men. I've played lot's of games were literally every character was female.

Yeah but they're running a business, it'd be a shit choice to just remove what could be a big part of your income because "Prefer drawing women".

But....who cares? If it's the type of game it might be, having more girls sounds like it'd be more productive.
I understand the basis of a dev team solely focused on developing a yuri (lesbian primarily, and which sometimes might delve into trans and futanari content) game, and by their own words, the Guild Project Team said that the game would basically be 90% yuri with some inclusion of actual MxF content, so no problems for me in that regard since that's what the developers envisioned and made clear (sadly recently and not at the beginning of production). Now, what I am actually more interested to hear exactly is, what did you mean by this statement: "having more girls sounds like it'd be more productive"? Production/development? Story-wise? What would be more productive specifically?

So? It's their business, why do you care? Besides, it's a lot harder to finish drawing something you don't want to. It might take them much longer to finish pieces with male characters as a prominent part, which would eat into their income as they wouldn't be able to finish as many pieces as they otherwise would.

Drifting slowly towards having a real battle system, I see. I dunno. This is the second or so game that's touted "we finally have some of the elements of a Wizardry-level combat system" as progress. It's good that they're keeping things moving, and yes they are very early in development still, but it really feels like it shouldn't take a long time to reinvent the RPG wheel. Then again, what they get done is what they get done, and it beats no updates at all. Maybe it's a case of a flaky programmer being replaced and some progress starting to happen. Here is an object lesson in why a lot of devs just throw up their hands and go with RPG Maker default combat.

I guess I am a little surprised that there's no Wizardry-like RPG combat framework already made in Unity. I guess that kind of game isn't exactly popular these days. Etrian Odyssey and SMT are kind in that spirit, and I guess that sort of gameplay's been stronger in Japan than it has in the West--you still see a new (porn) first-person 3D dungeon RPG come out from time to time on DLSite.

Anyhow, animal-ear people are here, and I'm an RPG gamer at heart, so I'm hopeful for this one to do well.

What would be cool is a game like final fantasy tactics, where you have your group and have dozens of quests with their own stories for the player to enjoy, and you would going up on the guild as you did them.
