OK, I'm really confused here. You say "...Amy's stat levels cannot be adjusted with the
Companion Mod above what levels are available as you progress through her quest." But the
Companion Guide says "Just a reminder, DO NOT. LET ME REPEAT.
DO NOT TOUCH HER STATS or you’ll
break the quest chain."
So here's what my Amy Stats look like in my Companion Mod for my most current game v3.8.0 Save (after updating to v3.8.0 yesterday and playing for several hours):

Now obviously I could STILL move those sliders around (but as you say, no higher than the new "max" settings), and I honestly don't know if I may have done that (I would never have "manually" set the 100/100 or the 200/200 that high on purpose using the Mod). What I DO know has happened is that I keep getting the red pop-up that says "Amy's love test Failed" (or however it is worded) for any appointment, event, or scene I haven't achieved yet.
So, there seems to be a discrepancy in the current Companion MOD that LETS you still adjust Amy's stats with the sliders (even if I can't go higher than the new MAX values), and the Companion GUIDE that says flat out "If you manually alter ANY Amy stats, you WILL "BORK" the Quest."
So, I don't know if I may have "Borked the Quest" or not now. I'm pretty sure in v3.7.0 I probably DID adjust Amy's stats manually using the Companion Mod. I don't know for sure if I may have moved any of them using v3.8.0 yesterday. But I'm getting a ton of "Amy Love Check Failed" pop-ups now that I never saw before.
And if the Companion GUIDE says "any manual adjustments to Amy's stats" WILL BORK the Quest, then WHY does the Companion MOD still allow you to move those sliders around for her stats? It doesn't pass a common sense test. It's just "an accident waiting to happen" if adjusting any of those Amy sliders now (up OR down) will definitely "Bork the Quest".
So that's why I asked if there was a way to "reset" the Love Quest for Amy and just start it again without "borking" the whole game or not. I honestly don't know if I may have "Borked" it or not right now. FWIW, reloading a previous save file from earlier in the game doesn't seem to solve it, because any time I go back and reload a previous save that is a previous VERSION of the game (from 3.7.0 or earlier) the game will immediately UPDATE all those earlier version saves to a v3.8.0 version of the save (it throws out any non-updated renders that aren't in the current version anymore, etc).
So yes, I'm confused. And Amy seems really pissed off at me recently "love-wise".
