Partially repeating and partially expanding on what I said above: there are two parts to save games for lifeplay. One is under AppData and will persist even if the main lifeplay folder is deleted - there is no need to copy it. The other part resides in the lifeplay folder (and contains character information). I think this is where your problem is. Have a look in the LifePlay folder .../LifePlay/Content/Saves/ and see if there is a numbered folder corresponding to the save slot (so /1/ if it was saved in the top position, etc.). This is the data that needs to be copied over between installs so that saves don't 'break'. In that there should be a Characters folder that contains a number of .lpcharacter files which store information on the npc's (and the player) for that save. If these get deleted then the corresponding save will not have proper characters to load.

It is possible that you have another issue (but I think it unlikely).copy across
/LifePlay/Content/Saves/
copy additional maps across from both
/LifePlay/Content/Heavy/SteetMap/
/LifePlay/Content/Heavy/SteetMap/Static/
copy across custom content (e.g. character presets and buildings), for me:
/LifePlay/Content/Modules/Waifu/
There are also peristent settings saved which shouldn't need to be copied across.
The settings configurations are saved (linux) in ~/.config/Epic/LifePlay/Saved/SaveGames/GameSetting.sav
and the map setups in ~/.config/Epic/LifePlay/Saved/SaveGames/[MapName].sav
