I mean, that's nothing new? All the Koikatsu/Daz3D/Honey Select stuff all look the same, too. There's very little variance. It's mostly all just palette swaps. And that's all human created... more or less.

AI art isn't exactly a magic button that generates perfect art. There is a lot of messing around with it to actually get a decent picture. I've yet to play this, so I can't say how well certain parts of it is, but if you've messed around with AI Art, you'd know how frustrating it can get to get something just right.
Parody can be legal as it gets but Nintendo has the capital to bury any independent artist they want in millions worth of litigation, and being the scum sucking vultures they are regularly threaten independent artists with exactly that.
