Because he touched Marina that day too. If he doesn't "select" a host himself, then he'll scry one person from whomever he touched that day. He doesn't know how to control the selection part of the power yet, so it selected Marina randomly.Question - I just finished ch 5. I had the scene where MC and Evelyn fuck like rabbits and he gains her power. He said she would be his guinea pig. I figured that would mean he would see what she would do that day, but instead ended up watching Marina?

Well MC also touched Bitch McBitchface in the paused photo session (if he agreed that is) so it could have been her as well.
Or Mrs. Ross.
Or Ruth.
Or Georgia.
Or Frasier ...
Thing is realistically the only person MC touched after he acquired that power is Evelyn and everyone else was touched beforehand so it should have been her.
And btw. that power also has ... weird specifications and unknowns.
For instance the "that day" is only speculated, so it could have been the not-so-nice barista she touched 5 weeks ago when buying a coffee.

It was explained pretty explicitly by Evelyn. Anyone she touches on the present day, she could scry into the next following day. The host is selected at random, but she's learn to select her host at will from those who she's physically touched.
Example: She makes physical contact with 5 people on the 18th... When she goes to sleep that night, she'll scry into the entire day's events of the 19th with full sensory perspective of her host. ONE of the five people she touched will be selected at random unless she chooses one of the five at will.
The scene where MC scries into Marina was simply to illustrate how Evelyn's power looks from her perspective. He might have touched a number of people that day and he was trying to scry into Evelyn per her advice but he failed. So his host was chosen at random and it happened to be Marina.
He did touch her before acquiring the power, true. But based on the rules we know of her power, it was within how it's expected to work. He did touch Marina that specific day and he scried into her next day while he slept.
