I mean, Ruth does talk about it with MC saying "on one hand, she may be doing it just cause she wanted to be devoted to the MC, but on the other hand, it could have been she just said that cause she's more accepting of more kinks/fetishes because of her powers (i.e. getting into other people's mind/view and experience what they experience during her dreams)"

And with that whole foursome sex scene between MC, Anna, Arwen, and Evelyn, she says often enough "Oh my god, I'm getting fucked by Arwen, it's a dream come true!" (and similar sort of lines with Anna, though more to do with Arwen, given she had more interactions with the musician).
For Evelyn, my interpretation of it is she's a total fangirl having sex with her idols.
Even before the whole thing starts, MC does state "only if Evelyn is OK with it."

Not to mention there is also a scene with her and MC back at MC's home (after returning from Anna & Arwen's house) where on MC's bed she embraces MC in a total bliss.
Though if you only watched part of the sex scene, didn't finish till the end and just went back, then you most likely missed it.

So I'm not sure what you mean by she "didn't deserve that."

Evelyn's not just MC's girlfriend, but also his wing-girl (well Ruth does also substantially help since she started guarding him), especially with her letting MC have sex with Moonsong.
Hence, I'd say it's only natural for a scene like the foursome to happen, with Evelyn herself actually encouraging the MC; especially given she wants her boyfiend to have more abilities.

You're right on all points, including the point that at a certain point I switched off and started thinking about things. What's coming in EP 8, 9, 10, etc.? Which events will the MC and Evelyn maneuver into? Do I want to go down that path? I've come to the conclusion that the event MC, Evelyn, Anna, and Arwen is the beginning of a path I don't want to go down. It's not MC's or Evelyn's decision, but mine.

In the first screenshot paths fork depending on if Evelyn is an LI or not and then... What the fuck is this and who the fuck is Anthony? Been some time since I played this game, loaded up a save and I get greeted with this. Doesn't matter if Evelyn is an LI or not in those choices, same text almost implying some shit happens between her and that other person who I can't remember for the life of me. Doesn't even have an entry in the character profiles screen. I got safe mode on too. It could be a woman? I have no way of knowing in game unless I restart. Can anyone answer please?

Not that I'm aware of. I use URM (universal renpy mod in case you don't know what it is) in all renpy games anyway, and there is also the UCD (Universal choice descriptor) that I don't use because with URM seems redundant but it shows what each choice does by reading the code. Well I may suggest this game to Mr Bubu in their thread do their usual awesome PDF walkthroughs if they aren't too busy already with the games they do walkthroughs for.

she went in so she could first find out what it's like, and second so she could get into the head of the guy and see what they are up to with the teacher that pimps him and Cat out
