I agree that Chuck is taunting or trying to taunt Sophia here, but I also think he is disappointed (not heartbroken that is too strong) he cannot leave lasting harm. It is the combination of the info we have currently why I think Chuck can be quite "hands on" if he wants to. While he enjoys the mental aspects more, the pysical is not unimportant.
