1. could Jessy's appearance change as the story progresses? By the work of characters who want to dominate her or by supernatural demons? Example having to get tattooed or get more piercens for money?
2. Could Jessey have a dick with demonic powers?
3. Do I have to lean towards being DOM or SUB or can I change depending on the situation? I was thinking it would be interesting if Jessey was SUB with women and DOM with men or the other way around, but for now I'm liking my SUB route.

No, you don't just have to play Dom or Sub, you can absolutely make it so that you would be DOM with men and SUB with women or vice versa, or depending on the character. But if you prefer one way, you have to make sure that the DOM or SUB value is higher than the other because they will decide on important story decisions what will happen (if there is a tie you can decide).
