I feel like we could use more NTR type games where the guys stealing gfs aren't jerks/assholes/homeless/creeps though. Anyone else feel that way?

No that is an absolute boner killing thought because without an asshole doing the stealing the game might well be tagged as a damn romance dating sim harem game.
Ya I agree with you, for me it just feels very weird if the one stealing the wife/girlfriend is a nice guy. After all NTR has builded a immense empire of cuck fetish, although that there is porn where the one stealing is a nice guy.. but that just feels out of place ya know? And if the guys werent jerks/assholes/homeless/creeps then why would they even bother stealing someone's girl? If the one stealing didnt have a bad personality then why would someone even play a game like that, I mean most of the times the point of the female getting stolen is because of the weak and nice personality of the mc..
If you mean the handsome playboy type who uses seduction instead of blackmail/rape to steal the girl, they exist already, although in less quantity than the ugly bastard stuff.
If you mean an actual nice guy stealing the girl, it will start looking like regular drama of a love triangle instead of NTR. In the first place, a nice guy generally wouldn't want to "steal" a girl like an NTR antagonist. Nor would there be corruption which is essentially one of the most consistent elements in NTR stories.

Most likely a game tagged with romance and swinging with the nice guy being the bff of the MC and MC has a diary where he writes all about how great and amazing and special his bff with decorative hearts circling his name.

No, because it's hot when the love interest gets seduced away from the nice/good/decent man by the absolute scum of society and corrupted into being a vain trashy gaudy bitch.
I would go as far as to say that NTR without corruption isn't NTR at all. A playboy getting "NTRed" by a nice guy who was caring and supportive of the woman is a totally different appeal. That type of story is what you see in a lot of netori games, actually.
edit: That's not to say the things you are talking about wouldn't be interesting. I'm not trying to gatekeep NTR or some shit. Just saying classic NTR is about the corruption of the woman by some villain. If you deviate from that set up significantly, it will be closer to a nuanced drama involving complex relationships rather than NTR. Those middle-ground stories would have its own appeal, but not in the same way as NTR.
