Newbie here but -
I think that DS missed a golden opportunity here with the hotel/jail situation. One that would achieve Lester's manipulative plans and burn both Jesse and Dan at the same time and still "claim/appear" to be blameless in Sarah's eyes.

Dan's already pissed about paying the bill, he's drunk on top of that and heads up to the room. Meanwhile Lester has Sarah blindfolded and the elevator seems to be taking a while and Lester tells her he has a surprise for her. They get to the rooftop level - where an outdoor balcony is adorned with a small table, a bucket of champagne and two glasses. Lester takes the blindfold off and Sarah is treated to the scene before her - he tells her he wanted to show her the stars see the city at night etc (opportunity for some actual conversation and character growth between the two like in ch19 when he "cooked" Sarah dinner).
Downstairs Dan arrives at floor 3 steps off the elevator and sees Jesse waiting at the door of room 326, becomes enraged and rushes Jesse and they start fighting - Ned calls the cops/hotel security (bc Lester already told him the plan) and waits until both are arrested/removed from the premises, as neither are guests. Up on the balcony, Lester gets a text from Ned that the cops have left with Dan and then Lester and Sarah come back to the room (Sarah none the wiser) and when she wonders why Dan hasn't arrived yet she texts him then tries to call but Dan's not responding bc he doesn't have access to his phone.
Lester plays it off as maybe he didn't want to watch and is either waiting downstairs or went back to the apartment. Sarah knows Dan had said "ch23-Last night was intense; I don’t know if I need that again for a while. I would definitely want to hear about anything afterward." She's already primed and irritated with Dan bc this is his MO of not answering or saying what he wants. So she just rolls with it bc she wants her favorite toy.
Once the night/weekend is over Sarah hears the vm from Dan, freaks and tells Lester that Dan's in Jail, another opportunity for Lester to save the day and bail him out for Sarah (proving once again that Lester can provide for her). When Dan accuses Lester of setting things in motion - Lester plays it off says the same dude from the club?, maybe this Jesse is a stalker and saw them having dinner, bribed the hotel staff, or overheard Lester when he was getting the room key at the front desk to find out the room number (something plausible at least in a make believe story). When Dan shows the photo of Jesse in front of the room, Lester could say to Sarah, didn't you mention on the balcony how Dan got this Jesse fired, maybe he wanted revenge.
This at the very least would give Sarah pause before accepting Dan's accusations. Sure she's concerned but she's pissed at Dan for getting drunk, not being in the room like she wanted, and then getting arrested causing more financial strain and now he's upset with the fantasy that he keeps waffling on. As a final act Lester could say oh by the way here's the money for our dinner last night, I wasn't planning on stiffing you for the meal just thought it would add some spice to your fantasy - you not liking me an all.
Lester gets the Jesse issue off his plate, knocks Dan down a lot of pegs and comes out at the very least neutral in the situation in Sarah's eyes. The only plot whole is Lester did say that she would be with him and a stranger in the hotel, but could be explained by Lester saying the night was too perfect and he decided that could wait for another day.

Now that's just me and how I would have resolved it, not sure how DS will fix it bc he burned a lot of bridges and will need to do some magic to make Sarah not some mindless robot in order to not see Lester in a bad light. Or maybe this is what DS wants, this could be the inciting incident that flips Sarah down the road of Lester can take care of all her needs and Dan is just holding her back from being liberated and he needs to learn/accept he's just her Dekuck now.
