I've reached the point with Vera where the game ask me which route I want either sex partner or girlfriend, who does that affect the history? Can I make all the girls my girlfriends? or sex partners? Or I can only choose one GF or I can make every single girl my GF? I mean its an harem game or this only affects the way the mc interacts with them?

you can make all the girls to be your GF, it just changes the dialouge and interactions but nothing bad gonna happen

One of them at a time, whenever you meet a new threshold for that. Probably all of them once the game is finished, just in a different order, but we don't know yet.
