Yeah, the GOG installers seem to be the bare minimum - if WiaB has DLC's they'll likely be separate downloads, and you don't have to use their launcher to install, which is a big plus for me.GOG is a bit different, since they pride their releases on no matter what you OWN the game. So, with that, you can download an offline installer if GOG ever dies.
Steam and GOG are really no different in the way you get them from Patreon or SS or Itch (whever) besides them being a market release which can be ran on any OS in a single package.
Some games also use Steam DRM which is pretty easy to bypass but there is only a handful of Ren'Py Steam games that deploy DRM.
I think Summers Gone had a bunch of bonus things for Steam if I remember right.
