The last possible point to select which path you want to play (as best as I can remember) happens after the control quest/event is triggered. So depending on your choice at that point it can continue or be locked.

8th or 9th.. why does he do that? Just say it's gonna be 9th and get on with it. If it's on 8th then release it early and people will be happy for the "earlier than promised" release. Now people just gonna annoyed it's not 8th. It's all about optics.. Promise on something you're 100% sure and if you get it early you'd bring communities morale 
. Currently we got a lot of "srry, i'm sick" excuses and "maybe that, maybe then" deadlines. I understand people get sick etc, but you don't have to say the reason for delays.. If you keep saying you're sick, people will lose confidence in you and your ability to deliver.

Not that I know of. There is basically just one big choise to make and that's how you act towards Eric. That will decide, what path you will follow.
Also, you can miss a few scenes if you don't buy the clothes for the girls before Eric does (first time get a loand from the bank, the game will tell you when it's the right moment).
Prio 1 is to get your website and the first camera up and running. Once you found it, follow the hints in the quest.
And always be nice and helpful to keep the girls happy - eccept if a quest tells you otherwise.
