Correct tag. You can play as a male, female, or futa. Male is currently limited to a human avatar and two sex scenes, but it is in-game and has been since July, when the developers released an out of cycle bonus update to Steam specifically to add it in.
Unless you have a Patreon account with a valid active subscription to Carnal Instinct, you don't. Someone leaked a Patreon build without removing any of the protections. A Steam version that's even more recent (and has more content) was released last night, and will probably show up on the thread sometime today. Keep an eye out for a version bump to v0.3.14.

Very little at the moment. It's an offscreen death with in-game implications that the develpers have explicitly confirmed is vore. Currently just renders as a lead-up constricty scene with the naga in question and then the player just collapsing in the standard death anim outside her cage.
For those waiting on the new steam build who want to try the game, v0.2.8 is the prior Steam build that the OP had. The changelog for it is in the first post of the thread.
As I mentioned here, the OP currently contains an un-cracked Patreon build. A new update was released on Steam last night, v0.3.14, so it's worth keeping an eye out for that being posted into the thread. In the interim, Kozuma has been kind enough to provide a copy of the last working version that the OP had, from the Steam update in July.
At the moment it's just the centaur. The only other fuckable male character is one of the two scenes available to a male player character. As for when there'll be more, that's sort of up in the air. The devs are wrapping up one major overhaul (body customization) and moving into another one (dynamic sex scenes), both of which dramatically limit their ability to add new sex scenes until they're done.
