Characters get different models, yeah you can pick and choose, just install the ones you want

It's different for different perks. Easiest is a movie perk, you need 50 for elite.

I see you already got the cheatzone. However, if you wish you can also start a previous version of the game, which had your saves, load your desired save, then "save to disk". At which point you can open the newest update and "load from disk" to resume your previous game.
