Can't get any of the saves working, as in they don't show up in the load menu, also the cheat menu doesn't work for me just crashes the whole game if the thing even launches. Any ideas what's going on?

In the game there is no way to replay any event. There was a mod which let you replay some scenes by @704621168 but it's on hold now.
The best you can do right now is use @BrandyYT

This mod will let you keep track on some of the major scenes in the game

The quest is called "opportunity" in this game. Yes, you can keep track on the progress by going to the opportunity tab.
