You can learn about it in Dylan's bar, too, especially when you're on Layla's route.
If you're on Alexis's route, you'll learn a lot more about Dylan's bar because Alexis makes money there, so she has far better information about the bar than Layla, who doesn't work there at all.

Ok... ...but the question to which I was responding was regarding how the MC learns about his own father and whether he could learn this on multiple routes...

The protagonist's father must have somehow found out that MC had returned to Madison Springs. He then took the opportunity to find out that MC was going to Dylan's bar and slowly started getting to know him. Considering that Santiago is friends with Layla and Alexis' father and Dylan himself, I guess one of them must have told him that. Subsequently, during conversations with Santiago, MC began to realize that Santiago could be his real father.
