As far as I know, you can go on the weekend event with Caroline only once this update because it's part of her this story line and essential one, and the text message where she suggests a date night, a proper date night, is where the current story line with her ends. I wasn't able to go on another weekend event with her either, which is sort of weird because you can with Sara, despite the fact that you can't even see her anywhere except during the event, haha.
