It depends on what you want, I know it can be frustrating for some to not be able to do everything, but the game was always heavy on choices, no surprises here.

So every update where Myriam goes on a date with someone, we will have a Cassius or Hammer scene? For the people who are not on one
So if I want to play future content with more than one of the potential dates, I'll have to have multiple playthroughs?

Yes, or you use Bibifocs mod, and respecive save points (that what I do)
Other possibility, use URM, and one save. From a superficial look at the code (for the patch), with whom is going to be the date is decided by to whom you had replied when Myriam came back from the hospital (and from some previous interactions, e.g. if you sent the cops to Hell, cannot expect to go to dinner with them), in practice, is a set of variables, only one of which (or none) should be true.
So, depending on your previous choices (if you already closed a path, or not), it is possible to take a later save, changed the variable that says to whom Myriam replied, and get that dinner - though do a save before you start playing with the variables, in case you screw up a variable value and have to go back.
To be honest I'm not all that fussed about Nubia, think I'd rather Myriam goes and get double teamed by Cassius and Hammer.

This is my solution. Using URM, I can cheat by playing through scenes without having the required tags. So, for example, when Myriam has to choose which "special someone" to call, you can choose Lucy or Cleavon or whomever, and have that person locked in for the date, but when the time comes to go on the date, you can use URM to select Nubia, play through that date, then go back to your previous save point, and play through the date you chose.
Yes, it's cheating. And yes, I usually prefer to play through a game multiple times to get the different paths that I want. But I'm currently pressed for free time, so I'm cutting some corners.

Or multitask and speed date them and give them quickies or forget she scheduled date at the same time with 2 different guys/girls and just skips the date and has 3some with them to make up for her scheduling mistake
I'd already worked out that the date was determined by which email Myriam replied to first after leaving hospital. I could have chosen everyone but Mike, because I had Myriam choose to concentrate on Danny at the club.
I don't tend to use Mods, and I'm not sure I'd want to do it that way anyway. If you're playing a route where Myriam is heading towards an exclusive relationship. Having her able to run multiple exclusive relationships concurrently on a single playthrough, would kind of ruin the sense of immersion for me. I'd much rather separate them into different playthroughs. So I guess that's what I'll do, for those characters I want to follow. If it's game I really enjoy like this one, it's not a big chore to replay the same content.

Also if you don’t want to date certain person but still want to see the scenes, just check the images folder in the game, it has every scene from the game so you can see what you might have missed by taking certain paths
So if Myriam starts dating one of these characters, will she end up with that character or is that still to be determined by some future choice or choices?
I'd prefer for her to date several of them simultaneously, but that obviously isn't going to be possible. I have used that from time to time, so I know about it. But I don't think I'll use that in this particular instance. I'd much prefer to have separate playthroughs.
Well, actually, in reality I also concentrate on one scenario - but I also like to check if other options that the one I chose on the spot can bring me after to something I like more, and even more importantly, when I update the incest patch, I don't do a full "debugging", but I need to be sure that the game still continues to work correctly, even if someone chose a path different from mine.

I for one am looking forward to that option of hammer and cassius, have been itching to see some more content out of that particular sector but i recognize that you have a lot more options to push out so i wish you the best and look forward to this upcoming patch
