The other thing still doesn't make sense to me, but I guess that's because I'm pretty rigid about sexuality.
literally this is what makes the most sense, I have never understood why in practically all transformation games the protagonist immediately after changing sex becomes attracted to men.

I agree. On zero routes is Taylor immediately attracted to men. Most of the stories are about sexual confusion and self exploration. It takes a lot of nudging and internal debate as well as a lot of experiences before Taylor may or may not start to question certain aspects of his sexuality. It should be (and usually is) a gradual process but it varies. I think there is more MF content because men are more aggressive and pushy leading to more opportunities for sex events. Most of his friends are also male and Taylor has an effect on people he/she meets so this increases the number of encounters. So even though Taylor likes girls being surrounded by men at the start produces a situation where a confused individual may easily be influenced. If you check out the Rhea scenes

You also don't necessarily need to know or read the full story to appreciate certain areas. For example you can use the Louise quickjump from the main menu to start her story (and skip Mitch's male dom branch) as long as you understand the context that Mitch is an asshole who takes advantage of Taylor and gets her to do a bunch of drugs while Taylor struggles with withdrawal and lots of damage to their original self identity. Taylor is wounded and in pain which is a perfect opportunity for a strong individual like Louise to swoop in and make her charms known.
The part about sexual rigidity is a very interesting concept and one Transfigure explores, generally making the point that some people are who they are and will never change but the majority of people have their sexuality on a scale that can shift in different directions based on their life experiences. That is the most accurate reflection of sexuality in my opinion that has the most evidence to support it.
As an interesting thought experiment, ask yourself why homosexuality is prevalent in both male and female prisons even though the vast majority of prisoners would identify as 100% straight despite a very large percentage committing blatantly homosexual acts shortly thereafter. Are all of these straight people hit with a gay ray as soon they step through the door? Of course not. They are humans. They have sexual and social needs that are largely unmet in prison. They seek comfort and satisfaction and since the only source is other prisoners of the same sex that's where they gravitate. When confronted with reality black and white sexuality quickly fades to grey. I don't think Transfigure is gay. It's grey.
